Outer Banks National Soft-Shell Week

Nothing captures the true flavor of the Outer Banks quite like fresh soft-shell crab—harvested locally and served just hours from water to table. From classic sandwiches to creative small plates and indulgent dinners, it’s a coastal favorite you won’t want to miss.

38 restaurants are currently participating in the 4th Annual Outer Banks National Soft-Shell Week, happening May 11–16, 2026. This weeklong celebration invites locals and visitors alike to enjoy a restaurant crawl featuring creative soft-shell crab dishes, with diners voting for their favorite.

New this year: crab-inspired cocktails, in-restaurant appearances from Sheldon the Crab, and the debut of the Soft-Shell Express—an experiential tour produced by Outer Banks Adventures featuring visits to local crab shedders and participating restaurants for tapas-style tastings. Tickets are now available for the Soft-Shell Express May 12th Route and May 13th Route.

So what exactly is a soft-shell crab? It’s a crab that has recently shed its hard outer shell, leaving it tender and entirely edible. Timing is everything—these crabs are carefully monitored and harvested at just the right moment, often within hours of molting, to preserve their delicate texture. It’s a hands-on, time-sensitive process that reflects the skill and tradition of our local watermen.
